Storage –

Keep airtight in the pantry, away from sunlight and damp. Use a dry spoon to scoop out. Use within 3-4 months from opening. With a best before of two years from the manufacture date, desiccated coconut remains safe to use for even longer periods as long as it is stored with minimal exposure to light, air, and moisture. This is why Kokonati desiccated coconut are packed at the origin, in the very plantations the coconuts are harvested from, to seal the freshness and reduce exposure from day one.

  • Connective Tissue Strength: Dried coconut provides minerals that strengthen connective tissues; skin, tendons, ligaments, bones, and teeth. Connective tissues contain large amounts of collagen, tough and resilient protein fibers that form networks and hold the tissue together. Both copper and manganese support healthy collagen production, helping keep these tissues strong. Every 28g of dried coconut offers 778 micrograms of manganese ( 43 percent of the recommended daily intake for women and 34 percent for men) as well as 226 micrograms of copper (25 percent of recommended daily copper intake).
  • Brain Health: The copper in dried coconut can also activate enzymes responsible for the production of neurotransmitters; chemicals that brain cells use to relay information. Other copper-dependent enzymes help produce myelin, the fatty coating that sheaths each nerve cell and helps the cell conduct electricity. The fat found in dried coconut might also prevent neurological disorders. One study, published in the “Journal of Alzheimer’s Disease” in October 2013, found that the oil in coconut helps shield nerve cells from the toxic effects of protein plaques, which would otherwise drive Alzheimer’s disease progression.
  • High Fibre; good for diabetics, and those with cardiovascular, cholesterol problems, thanks to its iron and fiber content. The body uses fiber to control blood cholesterol levels, and a diet rich in fiber fights type-2 diabetes and cardiovascular disease. Desiccated coconut offers 4.6 grams of fiber for every 28g, which is 18 percent of the recommended daily intake for women and 12 percent for men. The iron found in coconut helps the body make ATP ( a source of energy) as well as red blood cells that are needed for oxygen transport. An ounce of desiccated coconut offers 0.94 milligrams of iron;12 percent and 5 percent of the daily iron intakes recommended for men and women, respectively.
