RASPBERRY, WALNUT & CARDAMOM BREAKFAST CRUMBLE

CRUMBLE
• 1/4 cup walnuts
• 1 1/2 tbsp oat flour
• 2 tbsp coconut flour
• 1 tbsp desiccated coconut
• 1 tbsp ground flaxseed
• 2 tbsp oats
• 1 tbsp Cocavo Original
• 1 tbsp rice malt syrup
• 1/8 tsp cardamom
• Pinch salt

FRUIT FILLING
• 1 ripe “Bobby” banana, sliced
• 1 cup mixed berries
• 1 tbsp rice malt syrup
• 1 tbsp lemon juice

1. Preheat oven to 200°C. Lightly grease a small casserole dish.

2. To make the crumble, combine all dry ingredients. Add wet ingredients and stir until a crumble is formed.

3. For the filling, mix together all ingredients. Place into prepared dish, top with crumble and bake for 15 minutes until lightly browned on top.
