Avocado oil is a real win in our books. It has a high smoke point and a delicate nutty flavour, making it a very versatile and delicious oil for all types of cooking.

Avocado oil doesn’t have to be used just in savoury dishes though. Due to it’s unique (and addictive) flavour, avocado oil works perfectly for cooking delicious sweet treats, like these Blueberry & Avocado Oil Pancakes, too.

● 1/3 cup oat flour
● 1 tsp ground flaxseeds
● 2 tsp cornstarch
● 3/4 tsp baking powder
● 2 tsp maple syrup
● 5 tbsp almond milk
● 1/4 tsp lemon juice
● 1/4 tsp vanilla
● 1 tsp Cocavo Extra Virgin Avocado Oil
● 2 tbsp blueberries
● Pinch salt

  1. Combine all ingredients in a bowl and rest for 15 minutes.
  2. Heat a lightly greased frying pan over medium heat. When hot, pour in batter to make pancakes of the desired size. Flip when “set” on top. Repeat until the batter has been used up.
  3. Stack pancakes and top with desired toppings!
