COCONUT FISH CURRY – Recipe by Derek the Chef

This simple but delicious coconut fish curry will quickly become a family favourite. The recipe is by renowned celebrity chef “Derek the Chef” of Gone Fishing fame.

INGREDIENTS:

500gm white fish cut into chunks ( we used snapper)
1 x can (400grm) coconut milk
1 x Tbsp curry powder
1  Tsp ground cumin
1 x Tsp turmeric
1 x Tbsp fish sauce
1 x lime juiced
1 x onion, chopped
2 x cloves garlic, minced
2 x Tbsp Cocavo Garlic Infused Natural Ghee or Cocavo Lemon & Lime Zest infused Olive oil (for pan frying the fish)
Fresh Coriander for garnish
Cooked jasmine rice for serving

METHOD

In a pan over medium heat, warm the Cocavo Garlic Infused Natural Ghee , Cocavo Lemon & Lime Zest infused Olive oil
Add the chopped onion and minced garlic, and cook until they are softened, about 5 minutes.
Stir in the curry powder, ground cumin, and turmeric.
Cook for 1-2 minutes until the spices become fragrant.
Pour in the coconut milk and fish sauce and then bring the mixture to a gentle simmer.
Squeeze the lime juice over the curry and stir gently.
Bring a little more Ghee or Oil to a pan and heat to medium then add the fish chunks.
Cook for 4-5 minutes, or until the fish is fully cooked and flakes’
Pour the sauce into the middle of a Bowl or plate then add the fish.

Garnish with fresh coriander or Seaweed salad   before serving.
Serve with Steamed Jasmine Rice.
