HAPPY HENHOUSE TERIYAKI

Prepare a convenient and delicious Happy Henhouse Teriyaki Meal using Happy Henhouse protein pieces, marinated in a sweet and savory teriyaki sauce, paired with a variety of colorful vegetables and rice for a quick, flavorful, and protein-packed meal ready to enjoy throughout the week.

Ingredients

  • 300g hydrated Happy Henhouse Protein Pieces
  • 75mL soy sauce
  • 120mL water
  • 1.5 tbsp cornstarch
  • 4-5 tbsp organic maple syrup
  • 1 clove garlic
  • 1/2 thumb ginger, grated
  • 4 zucchinis
  • 2 yellow capsicums
  • 75g edamame beans
  • Sesame seeds to serve

Instructions

Step 1 – Whisk soy, water and cornstarch/guar gum in a saucepan and heat gently for 5-6 minutes until the sauce has thickened. Add the garlic and ginger. Once thickened, whisk in the maple syrup and remove from the heat. Set aside.
Step 2 – Heat the oil in a pan on the stove to medium to high heat.  Batch cook the hydrated Happy Henhouse pieces, by adding them to the pan and frequently tossing until browned. Place to the side.
Step 3 – Fry the zucchinis and capsicums until cooked through (about 2-3 minutes).
Step 4 – Mix teriyaki sauce, edamame beans, Happy Henhouse pieces and vegetables in the pan. Sprinkle with sesame seeds and serve.
