*Kokonati organic coconut water vinegar is made from the coconut water leftover after breaking the coconut and using the kernel to press out coconut oil . The coconut water is aged in wooden vats with the naturally occurring mother vinegar from the coconut sap , for 6 to 12 months. The vinegar is then flash-pasteurized and bottled immediately. Wisp-like mother vinegar form once bottled, this is normal due to the unrefined nature of vinegar. KOKONATI Coconut Vinegars are 100% natural with natural exotic sourness and rich in nutrients from coconut trees that grow in the nutrient-rich volcanic soils of Ceylon. It is considered a functional ‘superfood’ because it has healing benefits beyond its nutritional contents. In comparison with an Apple, a Coconut has more nutrients, that is the reason why coconut cider vinegar and even coconut water have more potency than apple cider vinegar. It comes from a source that’s naturally higher in minerals and other phytonutrients, the coconut.
Uses
For salad dressing, dips, preserves, pickling and for alkalizing drinking water. Coconut vinegar can be used as a hair rinse and as a natural skin toner. A natural remedy for nits in the hair – especially useful as it can be applied on children’s hair safely with no harmful side effects. It is widely known as an environmentally friendly solution for many household cleaning problems due to its 5% acidity when used on surfaces. Flavor
Aroma and taste is typically vinegary. Milder and fruitier than the Kokonati organic coconut cider vinegar. Depending on the harvest and season every batch of vinegar can vary in color and to a minor degree in taste as it is a natural cottage-industry product that does not use any chemical refining, additives, or preservatives to standardize the product like with large-scale commercially standardized vinegar.

Storage
Keep airtight in the pantry. With a best before of two years from the manufacture date, coconut water vinegar remains safe to use for even longer periods if it is stored with minimal exposure to light and air. The mother vinegar will continue to grow when stored at ambient temperature. Refrigerate the open bottle if you want to slow this process. Our vinegar-maker is the fifth generation vinegar-maker of a proud lineage. His great grandfather, Charles supplied coconut vinegar as instant stamina and anti-bacterial fluid that helped heal wonder soldiers during World War One! He was even awarded the British Certificate of appreciation for his contribution. Backed by generations of coconut expertise, and certified with ISO and Organic standards, the mill plays a vital role in the employment, welfare and well-being of the local village community. The children of our workforce are provided with school books and stationery for the entire school year. Packaging and recycling
Available in 250ml glass bottle. A light warm soak or a run under the hairdryer will remove the labels which are biodegradable and can be composted or disposed of in the garbage bin. If not reusing, dispose of the recyclable glass bottle in your recycling bin.
