RECIPE by Suza Katene-Cotton
This is a lovely refreshing salad
INGREDIENTS:
400g fresh raw beetroot, peeled and chopped into small cubes
150g carrot peeled and chopped
1 x large green apple peeled, cored and chopped
Small bunch fresh coriander (to taste) chopped
2x tbsp Cocavo Lemon & Lime Oil
20ml lime/ lemon juice
Large pinch sea salt to taste
Method
Mix all ingredients together in a large bowl
Refrigerate for an hour, covered
Serve with your favourite steak, fish, cheese, omelette, or burgers
