DEEP FRIED CHICKEN WINGS

Deep-fried chicken wings are a popular, crispy snack or meal made by coating chicken wing pieces in Cocavo Chicken Seasoning, then fryng them in hot oil until golden brown.
Essential Ingredients
- Chicken wings: Drumettes and wing flats (often separated).
- Cocavo Deep Fryer Oil: or Cocavo Beef Tallow
Key Steps to Make Them Crispy
- Dry the wings: Pat the chicken thoroughly with paper towels to remove excess moisture, spray with oil, or dip in buttermilk so the coating adheres well.
- Heat the oil: Heat deep fryer oil to 175°C to 190°C
- Coat the wings: Toss the wings in the coating just before frying.
- Fry in batches: Do not overcrowd the deep fryer, which drops the oil temperature and makes the skin soggy. Fry for 8 to 12 minutes until golden and crisp, or until the internal temperature reaches 165°F to 175°F.
- Drain and season: Transfer the wings to a wire rack over a baking sheet and sprinkle immediately with a little extra Mort’s Chicken Salt
