RECIPE

A fantastic recipe from Derek the Chef that hero’s NZ Mussels. Delicious & healthy for all the family to enjoy.

Ingredients:

24 x Fresh mussels Cleaned and debearded

2 x Tbsp Cocavo Light Coconut Oil or Cocavo Ghee

2 x Tbsp Cocavo Olive Oil

1 x Med onion finely diced

3 x Cloves Garlic minced

1 x Cup Dry White Wine (Torrent Bay Sauvignon Blanc)

1 x Cup chicken stock

1-2 Bay Leaves

1 x Tsp Freshly picked thyme leaves

1 x Tsp Fresh Parsley Chopped

1 x Tsp Freshly squeezed lemon juice

Cocavo Marlborough Sea Salt or Kalahari Desert Salt and Freshly Ground black pepper to taste.

Method:

  1. Rinse the mussels under cold water and scrub the shells to remove any debris, pull the beards out and discard any shells that are cracked.
  2. In a large pot melt the Cocavo Light and Olive oil then add in the Onion, Garlic,
  3. Pour in the Torrent Bay Sauvignon Blanc Dry White wine along with the Chicken stock, Bay Leaf & Thyme leaves. Bring this mixture to the boil then add in the Cleaned mussels.
  4. Cook until shells open (Around 5-7 minutes) discard any that do not open.
  5. Stir in the Lemon juice and fresh Parsley, check and adjust seasoning to suit.
  6. Serve immediately garnished with Chopped Parsley or Spring onion finely diced along with more Torrent Bay Sauvignon Blanc, & Crusty Ciabatta Bread.
