RECIPE
Delicious pancakes made with Gluten Free Buckwheat Flour and sweetened with Coconut Nectar & crunchy Coconut Sugat.
INGREDIENTS
- 1 1/2 cups Buckwheat flour
 - 3 Tbsp Coconut Nectar or honey
 - 1 tsp Baking soda
 - 2 tsp Cream of Tartar
 - 1 tsp Cinnamon
 - 2 eggs
 - 1 cup Milk
 - 1 tsp Butter
 
Method
In a large bowl, mix all the ingredients together until smooth. Heat a lightly oiled frying pan over medium heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each pancake.
Cook for 2mins, flip and cook for a further minute.
Remove and cover with a paper towel then repeat the process.
Serve with berries, coconut nectar (or honey) and a sprinkle of coconut sugar or icing sugar (optional)
