RECIPE
A fantastic recipe from Derek the Chef that hero’s NZ Mussels. Delicious & healthy for all the family to enjoy.
Ingredients:
24 x Fresh mussels Cleaned and debearded
2 x Tbsp Cocavo Light Coconut Oil or Cocavo Ghee
2 x Tbsp Cocavo Olive Oil
1 x Med onion finely diced
3 x Cloves Garlic minced
1 x Cup Dry White Wine (Torrent Bay Sauvignon Blanc)
1 x Cup chicken stock
1-2 Bay Leaves
1 x Tsp Freshly picked thyme leaves
1 x Tsp Fresh Parsley Chopped
1 x Tsp Freshly squeezed lemon juice
Cocavo Marlborough Sea Salt or Kalahari Desert Salt and Freshly Ground black pepper to taste.
Method:
- Rinse the mussels under cold water and scrub the shells to remove any debris, pull the beards out and discard any shells that are cracked.
- In a large pot melt the Cocavo Light and Olive oil then add in the Onion, Garlic,
- Pour in the Torrent Bay Sauvignon Blanc Dry White wine along with the Chicken stock, Bay Leaf & Thyme leaves. Bring this mixture to the boil then add in the Cleaned mussels.
- Cook until shells open (Around 5-7 minutes) discard any that do not open.
- Stir in the Lemon juice and fresh Parsley, check and adjust seasoning to suit.
- Serve immediately garnished with Chopped Parsley or Spring onion finely diced along with more Torrent Bay Sauvignon Blanc, & Crusty Ciabatta Bread.
