Buttery Warm Scones with Just 1g Net Carbs

They’re perfect warm from the oven with a little butter, alongside breakfast, or served with soups, stews and your favorite meals.

Ingredients:

• 3 Tbsp Cocavo Ghee or butter

• 6 large egg whites

• 1 tsp baking powder

• 1 cup LSA

• 1 cup coconut flour

Instructions:

1. In a medium bowl, whisk together the almond flour, coconut flour, flaxseeds and baking powder.

2.  Place the chopped butter in the freezer briefly, then mix it into the flour mixture using your hands or a pastry blender until it reaches a coarse, sand-like consistency.

3.  Transfer the mixture to the freezer while you preheat the oven to 425°F and prepare a cast iron griddle or cookie sheet.

4.  Whip the egg whites to stiff peaks. Gently fold them into the flour mixture until a thick batter forms.

5.  Scoop about 2 tablespoons of batter per biscuit onto the prepared pan and gently shape.

6.  Bake for 16-18 minutes, or until golden brown.
