
On a Keto diet, the craving for a sweet snack is never far away. Temptations are everywhere, so to help you out, these Keto shortbread cookies are a great snack, staying low carb when snacking on them couldn’t be easier.

Cocavo Ghee is used to add a blend of animal & plant based healthy fats to these Keto Cookies. The Vegan version uses Cocavo Vegan Ghee or Coconut Oil.
Quick & easy to make, this recipe makes about 16 cookies.

INGREDIENTS:
- 2 cups of Almond Flour
- ⅓ cup of Xylitol
- 1 pinch of Salt
- 1 teaspoon of Vanilla Extract
- ½ cup of Cocavo Ghee softened (Vegan version – replace Cocavo Ghee with Cocavo Vegan Ghee or Coconut Oil)
- 1 large Egg (Vegan version – replace egg with 1 teaspoon baking soda, 1 tablespoon vinegar)
METHOD:

Preheat oven to 150C/300F.

In a mixing bowl, add the almond flour, erythritol, salt, and vanilla extract. Mix.

Add the Cocavo Ghee (or vegan replacement) and rub it into the dry ingredients until fully combined.

Add the baking soda & vinegar and mix well.

Take tablespoon-sized pieces of the mixture and roll into balls, then press to a round shape onto a lined cookie sheet. The recipe should make approximately 16 cookies.

Leave a gap between the cookies as they will spread slightly.

Bake for 15-25 minutes, until the edges are browned. The cookies will firm up as they cool.

Leave to cool before storing in an airtight cookie jar.
